1.PREHEAT the oven to 180 C.
2.CRUSH the OREO cookies leaving them in pieces,one part for the mold and another part of cookies for decoration.TIP: If you don't have a food processor, you can put the cookies inside a food bag and hit them with a uslero or rolling pin, so that they are crushed.
3.CUT finely 24 OREO cookies. Melt 1/4 cup butter and mix with the crushed cookies.
4.COVER the mold tightly with aluminum foil, and refrigerate.
5.WHIP the cream cheese and sugar until blended. Add the sour cream and vanilla leaving its homogeneous texture.
6.WHISK the eggs, 1 at a time, so as not to give too much moisture to the mixture, adding at the same time the crushed cookies giving enveloping movements until all the ingredients are incorporated.
7.POUR the mixture over the mold and spread evenly adding then OREO cookies in Pieces.
8. BAKE 45 min.
Checking with a toothpick or toothpick that the center of the cake is dry.
9.MELT the remaining chocolate and butter in the microwave for 30sec or until melted.
10.COVER with the chocolate all over the mixture until smooth in the mold.
11.REFRIGERATE for 4 hours or until the mixture is firm.
12.SERVE on a plate or tray the cheesecake bites forming a tower.
